2017 David Duband Hautes Cotes de Nuits Pinot Noir

This wine comes from a cooler site close to forest on a high, steep elevation. It is a lovely wine with beautifully delineated lines and is fresh with acidity The vineyards sit just outside of David’s hometown, Chévannes, in the Hautes-Côtes-de-Nuits. David explained that these vines planted mostly in the 1970’s are on average three degrees Celsius less throughout the growing season than the Côte de Nuits, thus delaying their picking time by weeks. Stems are included in all Duband wines (average: 30-40% for Cote de Nuit). The grapes are crushed by foot to not break stems and fermentation is usually 17-18 days, then pressed and settled in tanks for 2-3 weeks. Aged 14 months in 225l barrels ( 60-70% old wood) and then bottled with no fining or filtration.
Sommelier’s Recommendation A classic example of French Burgundy (without the $$$ price tag!) Earthy and mineral, red fruit forward that lingers on the palate. Really opens up with some time in the glass to show a very elegant, balanced wine. Think Duck, lamb and other game meats to enjoy with this wine
In recent years David has adapted his work in both the vineyards and cellars and in the last few years is producing wines with not only remarkable finesse and detail but also exhilarating intensity and freshness. Working organically in the vineyards and with low levels of S02 in the cellar he also uses a relatively high percentage of whole bunch ferment and a low percentage of new oak for ageing and this is adapted to each wine as it needs. This results in wines of striking purity with fabulous depth and intensity without sacrificing the details of the origins of each parcel of grapes. These are wines showing terroir and the soil signature of the fruit for each parcel above all else. These are wines that are built to age classically and gracefully.
