This dry red wine made from 100%  Xinomavro is a blend of higher altitude parcels around the village of Fytia and the warmer, lower elevation parcels adjacent to the village of Trilofos. Vines are young and non-irrigated. Naoussa’s region warm continental climate with moderate rainfall throughout the year. Cooling winds from Vermio mountain are crucial for the quality of the grapes. Grapes are hand-picked, 75% destemmed, macerated for 12-15 days and fermented in stainless steel tanks for 3 months and aged for 8 months in concrete tanks.

Sommelier’s Recommendation  This wine has an impressively vibrant nose, very floral, reminiscent of young nebbiolo but with some lovely bright red fruit in the mix; strawberries and cherries. It’s a super unique wine, with a delicious taste of lightly brewed black tea on the palate again with those red fruits. A good amount of tannin make this a great wine to enjoy with food.

Thymiopoulos family has been in agriculture and grape-growing in the village of Trilofos for generations. Apostolos Thymiopoulos was the first to vinify the family vineyards while studying oenology. In 2005, he produced his first wine named “Earth and sky”. He truly believes in sustainable viticulture and minimum intervention during the whole winemaking process. Apostolos applies this philosophy to produce ten different expressions of xinomavro, the renowned variety of Northern Greece, trying to reveal every aspect of its potential. Thymiopoulos winery is located in Trilofos, a village on the foothills of Vermio mountain. A place in perfect harmony with nature, offering wines that reflect their origin.
