This wine sees careful parcel selection of premium cool climate Chardonnay from vineyards in Piper’s River, the Derwent Valley, East Coast and Coal River Valleys. A significant portion spends time on oak before this wine undergoes secondary ferment in bottles and spends 30 months on lees giving remarkle balance and poise for a multi vintage sparkling wine.

Sommelier’s Recommendation: First time I’ve heard of ‘Arras’ was in a conversation with a patron in the restaurant, over what he should go for a champagne or a sparkling. Great wine to start your meal or throughout. Elegant and medium body, delicate with fine bubbles. Aromas of citrus, grapefruit and sourdough. Pair great with  raw seafood entrees, seafood risotto and creamy cheese.
